NTDT 30144 -  Quantity Food Production


Three 1-hour lectures and one 3-hour laboratory/supervised practice per week. Prerequisite: NTDT 10103. Advanced study in food preparation, emphasizing standards, principles and techniques of producing quality food in quantity. Care and use of equipment, work simplification, menu planning, and basic cost controls.
